Roasted Balsamic Tomato Basil ice cream with basil lemon scented shortbread. I purposefully chose a rather low sugar recipe because I thought the tomatoes roasted with a fig infused balsamic turned out pretty sweet. The ice cream had a very subtle, sweet tomato flavor. The custard was infused with basil leaves and then the leaves were removed so the basil flavor was also apparent but not overpowering. The ice cream went very nicely with the crispy, crumbly basil shortbread cookie. I also added a light sprinkling of salt on top of the ice cream which brought out the flavor. I was pleased with the way it turned out. I will wait to see what @turkalurk88 and @callhimyeschef think.
