***I originally wrote most of this post in Mid-March, but was unable to get Y!C!’s recipe and then I forgot about it until yesterday.  So, I am going to post it anyway.  Note that our activities occurred in early to Mid-March.***

We’ve been spending most of our spare time over at the Money Pit, trying to get it finished so that we can move in.  We are gradually taking our stuff over there so we can unpack while we are waiting for contractor mistakes to be fixed. It’s been two weeks now since my daughter’s wedding to a wonderful young man.  The wedding was lovely and we were lucky the weather was not hot, nor cold.  The weekend before the wedding the temperature was 106 degrees.  Two days after the wedding the weather turned quite cold-around 65 degrees- and rainy.  This past weekend, the weather was 109 degrees.  The temperature on my daughter’s wedding day was 89 degrees.  God was definitely smiling on this wedding.

Spicy Red Chicken Posole in a Crock or What to Eat While You Are Planning a Wedding

Activities are starting to heat up around the Schmautzhaus, even though the weather has been a little chilly, because my only daughter is getting married this summer and we have lots of planning to do.  What better way to conquer the cold and plan a wedding at the same time than making something in the Crock Pot?  Yes!Chef! has never been a fan of the Crock Pot.  He won’t tell my why…he just shrugs his shoulders.  But, I think it’s because it doesn’t feel like cooking and, more importantly, you can’t lift the lid and stir it around while it’s cooking. Now, he says he is really enjoying the slow cooker and so he made some spicy Posole in the crock to prove it.
