Chiles and Limes go together like Love and Marriage

It’s been two weeks now since my daughter’s wedding to a wonderful young man.  The wedding was lovely and we were lucky the weather was not hot, nor cold.  The weekend before the wedding the temperature was 106 degrees.  Two days after the wedding the weather turned quite cold-around 65 degrees- and rainy.  This past weekend, the weather was 109 degrees.  The temperature on my daughter’s wedding day was 89 degrees.  God was definitely smiling on this wedding.

Salmon Two Ways or Whenever I see an orange fish I always think of Nemo.

Orange fish is one of my favorite fish to eat.

But, don’t worry, this post is not about eating Clown Fish…or even goldfish.

Steaks and Mistakes or This is the best Flank Steak and Chimichurri meal that I have ever made

Flank Steak with Chimichurri Sauce

I love steak. I am not a meat and potatoes girl.  I am a steak with yummy sauces girl.  Although I will eat potatoes when Yes!Chef! makes them (and he loves potatoes), I can do without them for the most part.  But pair up a great steak (and that includes ground up types of steak like hamburger) with a great sauce (not gravy) and some interesting veggies and I am a happy woman.

A Day To Remember and Be Thankful and Eat Barbecue Ribs with Broccoli Salad!

Happy Memorial Day, even though it’s a little late.  We spent the day, actually almost the whole weekend, at Tahoe, which is our habit.  This year, though, we had no family with us.  It was just Yes!Chef!, me and Obie T. Dogg.

Basic Economics of the Freezer or What is that and how long has it been in there?

Spaghetti & Cheese Snack Pie

The other day I was reading some of the comments that we received on our Facebook Page and I came across a link from a very interesting Facebook Page called On The Homefront.  On her page she issued a Pantry Challenge.  I thought it sounded interesting, so I spoke to Yes!Chef! about it and he was on board.  Here’s the challenge:  See how long you can go with just making meals out of your pantry and freezer.  Go to the store only to buy necessary perishables like veggies, fruit, dairy.

So, since April 1, we have been scouring our freezer and pantry for long forgotten items to see how creative we can be.  Unfortunately, we have also discovered things that are of unknown origin and they look too scary to eat.  (Here’s a public service reminder to label and date things when you stick them in your freezer.)   But, mostly things have been labeled pretty well.

Kentucky Fried Chicken Redux or Guilty Pleasures

Fried Chicken with Mashed potatoes, gravy and green beans

I might have mentioned that it was my birthday a couple of weeks ago. And, in celebration, Yes!Chef! made dinner for the fam.  He suggested an upscaled Kentucky Fried Chicken type of recipe, which I thought might be mighty tasty.  I’m pretty sure most people have eaten at Kentucky Fried Chicken at some point in their life.  My daughter tells me that in Mozambique, the Kentucky Fried Chicken Restaurant is where everyone hangs out.  She also tells me that they eat a lot of chicken in Mozambique, along with fruits, vegetables and rice.
